- ½ cup (125 ml) canned black beans, well rinsed and drained
- ½ tomato cut into thin wedges
- 1 tbsp (15mL) chopped red onion and chopped cilantro
- Squeeze out a generous lime
- ½ (mL) salt
- ½ cup (125mL) shredded romaine lettuce
- ½ corn, fresh
- ½ cup grated cheddar cheese
Preparation Process of Burrito Bowl:
Prepare rice according to package directions. Add cilantro to rice. Meanwhile, pour the oil into a small skillet and heat over low heat. Add peanuts and ground spices. If the beans are not salted, add a little salt. Cook, stirring, for 2-3 minutes, until it browns the beans. Remove from heat and set aside. Combine all ingredients to make nut Sauce and Red Wine. If the dressing is thicker than you want, dilute it with water.
In a bowl, combine beans, tomatoes, shallots, cilantro, lime juice, and salt. Divide the rice into 1 large, deep, separate bowls and drizzle half of the sauce over them. Place the peanut mixture on top and remove about ½ from each bowl. Add lettuce, corn, and cheese to the bean mixture. The avocado clump swells. Spread the rest of the sauce and sprinkle with seasoned nuts.
